Study of Interaction between Gelatin and Copper (Ⅱ) Using Synchronours Fluorescence Spectroscopy

Abstract: Interaction of gelatin with Cu2+ ion was investigated by using the synchronous scan fluorescence spectroscopy. An equation for synchronous fluorescence quenching effect between gelatin and Cu2+ ion was introduced. The binding constant and number of binding sites were determined from the experimental data. The change of conformation of gelatin with the addition of Cu2+ ion was discussed. The reasonable result were obtained.
