A STUDY ON OXIDIZED GELATINS EMPLOYED FOR CHLORIDE-RICH TABULAR GRAIN EMULSIONS

Abstract: The previous study showed that high chloride tabular grain emulsions having higher aspect ratio could be achieved by employing low methionine oxidized gelatins.In this paper the properties and methionine content of oxidized gelatins have been studied.Oxidized gelatins with different methionine content were prepared through oxidizing inert gelatins with H2O2.The reducing power of oxidized gelatins was tested by potential titration method,the methionine content was evaluated with L-8500 amino acid analyzer,the molecular weight distribution of the different conformation components was determined with SDS-PAGE method.The results indicated that the methionine content and reducing power varied with the different degree of oxidation,and oxidation had no remarkable influence on the molecular weight distribution of the oxidized gelatins relative to the original gelatin.
