A STUDY OF MOLECULAR WEIGHT DISTRIBUTION OF OXIDIZED GELATIN

Abstract: The molecular weight distributions of oxidized gelatin was determined by the improved SDS-PAGE method. The experimental results showed that when oxidation duration was shorter than 24 hours at 40℃ and the amount of hydrogen peroxide added was less than 60mmol/g gelatin , the molecular weight distribution of oxidized gelatin had no remarkable change . These two factors may be considered as the safe conditions for H2O2-oxidation of gelatins.
