摘要: 明胶是由十八种以上氨基酸以钛键连接而成的长链蛋白质。在明胶溶液和以明胶作为分散介质的照相乳剂中,具有不同分子量的大量的无规卷曲的钛链,在一定的环境和介质中,又会自身朝着热变性的反方向进行:即单个的钛链,通过氢键和其它次级键的再交联,在一定程度上又重新形成α螺旋的三联体,这个过程称为复性过程。

Abstract: Space conformation of gelatin restored on the surface of pyrolytic graphite with the computer controlled scanning tunneling microscope was invesfigated. Scanning tunneling microscopic image of gelatin space conformation with angstrom resolution was first obtained. The results show that gelatin restored on the surface of pyrolytic graphite present at β-configuration.
