铜(Ⅱ)/明胶(酶解明胶)络合物的制备及其络合形态的探讨

摘要: 许多金属元素对于生物体是必需的,Na、K、Mg、Ca、Mn、Fe、Co、Cu、Mo和Zn在人体中的含量约3%;各种金属离子在生物体中具有不同的作用,其功能是很复杂的.铜在生物体内主要是进行氧化还原反应,起输送氧气和电子载体的作用.如果人体内缺乏铜,则出现神经失常、动作震颤即威尔逊病和肝硬化等.另外,铜对调节体内铁的吸收和血红蛋白的合成,以及形成皮肤、头发和眼睛的色素都有关系[1].明胶或酶解明胶是高分子量或低分子量的多肽,由生物体所需的多种氨基酸构成,其中甘氨酸约占1/3.若将明胶或酶解明胶与金属元素(如铜)制成络合物,则不仅对生物体补充了金属元素,而且补充了氨基酸,这对医学、生物学等无疑具有重大的实践意义,同时也为明胶类新产品的开发创造新的途径.

Abstract: The chelate complexes of copper (Ⅱ) with gelatin and its enzyme hydrolysis products have been prepared. The proportion of chelates is determined by spectrophotometry. The result shows that 9 grams of copper (Ⅱ) associates with 100 grams of gelatin to yield a chelate; that 100 grams of different enzyme hydrolysis gelatin chelate complexes 10.411.0 grams of copper (Ⅱ), respectively. IR and ESR spectra of three copper (Ⅱ) gelatin ( enzyme hydrolysis gelatin ) chelate in solid state at room temperature have been examined. The complexing state of these copper (Ⅱ) chelate complexes are discussed. The peptide bond in these chelate complexes plays an important role.
